Birthday:Key Lime Pie

Today is Keith's best friend Jared's birthday!! He LOVES key lime pie. So I made him one!! I'm sure it's not as good as what he gets for dessert at a fancy restaurant but it's the thought that counts right?!

Key Lime Pie
1 graham cracker crust
1 can of condensed milk
1 c key lime juice
1/2 c sour cream
lime zest
Topped with some whipped cream!



We celebrated yesterday by bar hoping and watching college football! It was a lot of fun but of course always makes Sundays a bit slow and full of recovery.


We also worked on the house this weekend!! Friday night we painted and brought the first car load of stuff over! I can't wait until we get all our furniture there and find a new home for everything.

Apple Cinnamon Breakfast Bars

I found this awesome Apple Cinnamon Breakfast Bars by The Lean Green Bean. I love having something quick and easy to grab when I want a snack or easy breakfast. 
The only change I made was an extra cup of applesauce instead of a grated apple. When I started grating the apple it was pretty much turning into applesauce so I said forget it!! Mmm when they were baking they smelled amazing!!



I went to Trader Joe's today too. We all enjoy when I go :)

Rated as a great summer read but I have to say it's a good fall read too! Kept me intrigued until the very end!!

Whitewater Center
Last night was the last night that the Whitewater Center had Thursday night River Jam. We have been before in August to see Red Wanting Blue. It was an amazing time. We wanted to go again before it was over this year! We didn't know the band this time but they were really good. A folk, country style. It was the most beautiful night! We already looking forward to next year's River Jams!!

Home Owners!!!

We officially closed on our house today! I know I haven't talked much about the process but honestly Keith took care of most of it. And I didn't want to announce it until it was for sure!! We won't move until the middle of October but we will be painting and trying to move some things as we visit the house.
We are so excited and proud home owners!!

Calling all blogger friends!

Hello fellow bloggers.
I am completely technologically incompetent. It's really sad. Just yesterday even, I wanted to update my iPhone like the rest of America.. tried and failed! Simply no surprise. One trip to Verizon and my husband fiddling on the computer, thankfully it was resolved!
But anyway on to my purpose of this post.. I have been reading/following a lot more amazing blogs this week and want to make the most of mine too! I really want to revamp, make a blog buttons, show other's blogger buttons, etc. on my blog. I have tried to make my own blog button myself and just can't get it right. Do any of you have suggestions, tips, links or someone I can hire to do it for me?!

Heads up!

Monday's always come so soon! Our friend, Brad, from college visited us! It was definitely a bro weekend. Me and all the boys. Brad got in around five pm. We grabbed pizza and went out Friday.

Saturday we spent our time showing Brad around Charlotte and spending time at the VBGB (Very Big German Bar). It's one of our favorite spots to bring friends. Good North Carolina beers and some life sized board games to play! We played connect four, jenga and this phone game called Heads Up. Have any of you heard of it? Ellen plays in on her show. You hold the phone up to your head so you can see the screen. Words flash up and they give you clues and you have to guess them. It's a fun game, definitely recommend it! 
We went to a friend's place that night. We had a good weekend and good company. 

The bar has an icy ledge so your beer doesn't get cold! Brilliant!

My Favorite..

My Favorites this week...

Happiness Project
This book is amazing, I recommend it to everyone! It is about a woman who is happy with her life but wants to be happier. So she takes a whole year to focus on her happiness. Each month she conquers a 'topic' of her life that she wants to focus her happiness, while maintaining her happiness goals from the previous months. For example her first month was energy- go to sleep earlier, toss/restore/organize, tackle a nagging task, exercise better, and her second month was her marriage- quit nagging, don't expect praise or appreciation, give proofs of love. It's an amazing book and I have been inspired to start my own little happiness venture!

"First is the preparation stage, when you identify what brings you joy, satisfaction and engagement and also what bring you guilt, anger boredom, and remorse. Second is the making of resolutions, when you identify the concrete actions that will boost your happiness. then comes the interesting part: keeping your resolutions,"

Sweet Potatoes
I have never really tried or liked sweet potatoes. I wanted to try them again because they are so full of vitamins! And I have discovered that they are delicious!!! I got a whole bag full so I have been eating them all week.




Dri Fit
These are the most amazing running pants. Keith got them for me for Christmas, and they were perfect for this weeks chilly morning runs. They are comfy and well fit. They have a nice little pocket in the pack for my phone or iPod. Obsessed.



TJ's Chunky Guacamole
This guacamole is seriously amazing!! 


Grey's Anatomy
I watched the first three to four season religiously but then stopped. I loved this show when it first came on. It was the reason I wanted to become a nurse! Since I still have a lot of time on my hands I have been going through them on Netflix. I still love it!! It's the show where it is hard to sit and multi-task, I don't want to miss anything!

Welcome Wesley!

Did anyone elses week just fly by?! I cannot believe it is Thursday night already. For not having a job- this week was beautiful and very busy!! I just wanted to say congratulations to our good friends in Charlotte- they had a healthy baby boy this week!! Wesley Truett. He is so stinking cute, I can't even stand it!  We went to visit him and momma tonight so I just had to share the pictures!


Keith looks like a natural! His phone deleted the picture of me and Wes.. rude! 

We are having our friend from college, Brad, visit us! We are really excited to see him and excited for a great weekend!! Look for the weekend recap.

Cookie Craving!

Mmm I have been craving some chocolate and in the baking mood! Today I made chocolate chip cookies- I always use the recipe on the back of the package.. today I substituted the all purpose flour with whole wheat flour. And the two eggs with 1/2 cup of applesauce!

Chocolate Chip Cookies:
2 1/2 c whole wheat flour
1 c butter (softened)
1 tsp baking soda
1 tsp salt
3/4 c granulated sugar
3/4 c brown sugar
1 tsp vanilla extract
1/2 c applesauce
2 cups chocolate chips

Mix all ingredients together. Refrigerate for an hour.
Bake at 375 degrees.




I have to admit they weren't as good as all purpose flour and eggs but they did taste great!! And felt a little less guilty.

Sweet Potato Cheese Crisps

First of all today is the most beautiful day!! I am loving the cooler weather. I had a nice 4.5 mile run this morning and the cool breeze felt amazing.

Keith's parents were just here and even though they like to take us out while they visit. I still like to have options and some munchies to snack on. They were supposed to stay until Monday but they ended up leaving Sunday afternoon. They like dips and I always want to try something new so... Keith and I decided on Chile con Queso dip and Sweet Potato Cheese Crisps! I saw this recipe sweet potato recipe and I HAD to try. Healthy and minimum ingredients, my kinda recipe.
Since they left early they will be missing out on these goodies!! I only have made the sweet potato bites so far but check back for the queso!

Sweet Potato Cheese Crisps- Recipe found at Carrots n Cake-So Cheesy
(I used Mrs. Dash Southwest Chipotle seasoning, instead of rosemary.)


They definitely missed out!

Family visit.

Keith's parents came to visit again this Saturday. I don't know how they do the one day trips but it's good to see them!
NEEDED a pick me up after the early morning race. 

They like to take us out to eat while they are here, not complaining!! It makes entertaining a little less important and we can try new restaurants that we usually don't go to.
We snacked at Taco Mac and then went to Mac's for dinner. Mac's is a BBQ joint and oh my goodness the BBQ there, or anywhere in Charlotte, is amazing. I always get pulled pork sandwiches with coleslaw on top, and I like to mix the BBQ sauces.


And this morning after church they took us to Local Loaf. It was delicious and very fresh!! The roll they used for the burger literally came right out of the oven.


Since we ate out so much this weekend, it felt good being back in the kitchen and eat something healthy and fresh. I baked salmon and sweet potatoes!!  && Chocolate Chip Banana Bread for dessert!!

Absolutely delicious!! I used to never eat fish or sweet potatoes. I'm so glad my taste buds have been changing!
