Run like a girl

I did it!! I completed my first 10k!! Next stop, half marathon!
We got in to Columbus, OH around 10pm on Firday. So I was able to get some good sleep before the 8 am race!! 
It was an all woman race. It was amazing to see so many women runners! So many groups of women there supporting and running with each other. The weather was perfect too- cloudy and cool morning.
I have never been so proud of myself for accomplishing this goal. I felt so good the whole run! My goal was to do it in an hour and I did it in an 1:02:37!!

Keith was again my photographer and awesome cheerleader!!

Cincinnati

After the race we drove to Cincinnati, OH to visit our college friends! We met them at a restaurant called Willie's. They have some amazing bar food and had all the college games on.
Later that night we went downtown and went to a new bar called Locals for the Ohio State game. And we saw some more friends!

Ohio is for lovers

We are spending the week in OHIO. I could not be happier about this. While I love Charlotte.. nothing beats the excitement of going home to see our family and friends!


We are leaving tonight and going to Columbus, OH. I have my 10k tomorrow! I am pretty nervous!! I've never ran one before but am feeling very confident and ready!!

We will then be spending Saturday in Cincinnati., OH We both went to college there and most of our friends still live in the area. We hope to see a lot of them and have a good time.

We will be spending the week at my house. Keith's work is the best. They are letting him work from home! So he doesn't have to take vacation days!!

Anna, is getting married that Friday. So I will be at her dispose of last minute wedding planning! Between all these weddings, I feel like a pro now!
I also have a hair appointment, doctors appointments to catch up on & I'm hoping to get some good family and friends time in.. So it will be BUSY. 

I will try to post from home but I'm sure it will be a whirlwind! Talk to ya'll soon.

October what?!

How on earth is it October and how on earth is it Thursday already!! Since I don't have much time to chat, here is what I have been up to this week.
  • Sniffles: Yes, I got sick after this weekend!! I had a head cold and the worst terrible runny nose ever. I never get sick. And from the symptoms I imagine this is what it feels like to have allergies. 'Knock on wood' I'm not developing any!
  • 8 mile run: Monday, even though I was down with the sickness I had to get my run in so I could stay up to date with my training!! For the first time ever I tried Gu Chomps with my run and they were surprisingly delicious and worked! No GI distress and gave me a boost to finish my run strong. I ran another 5 mile and 3 mile this week and now resting for my 10k this weekend!!
  • Working on the house. And packing!! That is obviously the worse part and most tiring. Thankfully we only live one flight of stairs up. With the temperature creeping back up it's been brutal.

  • Like I said...Packing and more packing. For the house and for our trip home this weekend.


  • Lunch date: One of my best friend's, Ashlie, mom was in town so we grabbed lunch. It was so great seeing her and lunch was yummy!!
  • TWO interviews: I think that is the reason I have been getting a little bit sick. So stressed from interviewing! I'm hoping for good news so keep your fingers crossed!
  • Cooking for the new parents. Our friends Dan and Maggie had their first born so I wanted to provide them with dinner! I made them stuffed shells and made us a batch too :) 
Stuffed Shells (again this is a double recipe, I usually cut in half if it's just for Keith and I)
1 box jumbo shells
2 pounds of ground beef
1 chopped onion
2 Tbsp parsley
1/2 tsp oregano
1 tsp garlic salt
2 beaten eggs
2 c (16 oz) cottage cheese
1/2 c shredded Parmesan
1 1/4 c shredded mozzarella cheese
 1 large jar of marina sauce

Cook and drain shells according to package. 
Brown and drain ground beef. Add spices and let cool.
Mix eggs, cottage cheese, Parmesan, and 1/2 c mozzarella cheese together. Then stir in the cooked beef. Stuff shells and place in baking dish. Pour marina sauce over the shells. Top with 3/4 c mozzarella cheese.
Bake at 350 for 45 minutes.

Birthday:Key Lime Pie

Today is Keith's best friend Jared's birthday!! He LOVES key lime pie. So I made him one!! I'm sure it's not as good as what he gets for dessert at a fancy restaurant but it's the thought that counts right?!

Key Lime Pie
1 graham cracker crust
1 can of condensed milk
1 c key lime juice
1/2 c sour cream
lime zest
Topped with some whipped cream!



We celebrated yesterday by bar hoping and watching college football! It was a lot of fun but of course always makes Sundays a bit slow and full of recovery.


We also worked on the house this weekend!! Friday night we painted and brought the first car load of stuff over! I can't wait until we get all our furniture there and find a new home for everything.

Apple Cinnamon Breakfast Bars

I found this awesome Apple Cinnamon Breakfast Bars by The Lean Green Bean. I love having something quick and easy to grab when I want a snack or easy breakfast. 
The only change I made was an extra cup of applesauce instead of a grated apple. When I started grating the apple it was pretty much turning into applesauce so I said forget it!! Mmm when they were baking they smelled amazing!!



I went to Trader Joe's today too. We all enjoy when I go :)

Whitewater Center
Last night was the last night that the Whitewater Center had Thursday night River Jam. We have been before in August to see Red Wanting Blue. It was an amazing time. We wanted to go again before it was over this year! We didn't know the band this time but they were really good. A folk, country style. It was the most beautiful night! We already looking forward to next year's River Jams!!
