Go Bearcats!

I don't really love college football, I prefer NFL. But today kicked off the games and still a reason to celebrate! We like to root on our Alma Mater, the University of Cincinnati Bearcats, and The Ohio State Buckeyes. 



Mimosas at All American Pup- they couldn't get the Bearcat game so we switched venues. Oops. They usually have Ohio games on.

I was DEAD sweating outside. I asked Keith if I was sweating through my of course light grey shirt and he said no... he lied! I was completely mortified and we moved the football cheering inside.

We were like the worst customers ever today... We switched restaurants. Asked them to change channels. And had to change tables.

Don't Eat this Book

I guess this will be a venting post from the dietitian in me..
I'm sure most of you have heard of the documentary/movie 'Super Size Me'. I have just finished his book written after his experience and following tons of research. This book was published in 2004, so some of the information is a little outdated but still very relevant and important!!



Some of the points from that I book that I thought were most of interest to me..

  • The most shocking... the American Heart Association predicts that if children do not change their dietary and lifestyle habits that by the year 2025, 1 out of every 3 children will have Type 2 diabetes. I mean!!!! Shocking. It used to be rare to know someone with type 2... I only knew one through all of schooling and now 1 out of 3 children may have Type 2 diabetes! (Type 2 diabetes is where insulin resistance develops unlike type 1, it is an autoimmune disorder where insulin isn't produced.)
  • He talks about all the excuses we Americans make for doing any physical activity. I mean I think we can all be guilty of this. Have you ever done this?.. I need to shower, well I can't shower before I work out! Let me just watch one more episode on Netflix, but now I'm hungry and you can't work out on an empty stomach! Now I'm full so I need to wait, I'll watch one more episode... It never ends! What works for me is setting goals, or a plan. It motivates me and helps keep me accountable so I don't make excuses.
  • This is my #1.. I absolutely hate 'diets', the word, the thought, all of it. Most diets tell you to cut out all the carbohydrates, or all the fat or all the protein, etc. I vow to never promote a diet that cuts out a major food group and promote an unbalanced diet!! I believe "the only way to lose weight and keep it off is to eat sensibly and to exercise." Lifestyle change.
  • "Overeating can be as bad for your liver as alcoholism." Scary! In his one month of McDonald eating he showed signs of liver disease!
  • A favorite.. "Studies have shown that getting kids, boys are girls, involved in the cooking-- beyond teaching them kitchen skills they can use all their lives-- is an excellent way to get them interested in food. Kids who help out in the kitchen are much more willing to try stuff they'd normally turn up their noses at. Then sit down as a family as often as you can and share that meal." I could not agree with this more. Cooking skills and family dinners are not as important as they used to be. When I start my family, this will definitely be essential in our household. 
There is a lot more to share so I suggest if this interests you to go pick up the book!! I mean don't get me wrong Americans are making changes and being fit and healthy is becoming more popular. But this book definitely opens your eyes!

Revamped Overnight Oats

I found another, less ingredient, more flavorful recipe for overnight oats. This one did not have Greek yogurt in it. I usually eat this after a run so I want the protein. So I revamped the old Overnight Recipe I posted. Here is my revamped version combining these recipes:
InspiredRD Overnight Oats
PB Fingers Overnight Oats

Revamped Overnight Oats
1/2 c rolled oats
1/2 c milk
2 Tbsp. Chia seeds
1 tsp cinnamon
2 scoops of Greek yogurt

Mix all ingredients together in a medium bowl.
Cover and place in refrigerator overnight.
Add 1/4 c milk and microwave for 1 minute.
Serve with fresh fruit on top and/or peanut or almond butter.

I was literally in bed and forgot I wanted to make these for the morning!! Jumped out and made late night overnight oats.

Skinny Jalapeno Popper Chicken

I got this recipe again from another RD blogger who inspires me... Carpe the Sangria- Skinny Jalapeno Popper Chicken

I had ALL the ingredients except chicken so that is an ultimate use of resources!! Jess said it was boyfriend approved too, so hopefully Keith enjoys! I just won't tell him that it's a 'skinny' version.



OKAY.. I know this looks a mess and well it was...

With some left over corn on (off) the cob.

It was AMAZING & Keith approved.. Enjoy!

Work with what you got!

We are running slim on food here at the Money Residence. Luckily I can prepare a delicious dinner with the fresh vegetables and goodies we brought back from home.

Sweet corn!!



Roasted Red Potatoes.. so easy to make and SO tasty!
Roasted Red Potatoes
Red potatoes halved
1/3 c olive oil
1/2 packet of Italian seasoning

Preheat oven to 450 degrees
In a large plastic bag, combine the seasoning, oil and potatoes. Close the bag and shake until the potatoes are completely covered.
Pour potatoes into a medium baking dish, bake for 40 minutes.

Wentz Wedding

One of my best friends from high school and since 6th grade got married this weekend!! She has been dating this guy since high school! High school sweethearts, how rare and special :)
I was so honored to be by her side this weekend and she was the most beautiful bride!! She didn't let any of get a glimpse of her wedding dress until that day! It was so her and perfect.

We got to my house Thursday night. Friday I spent time at home, lunch with my mom and step dad and got ready for the rehearsal dinner. After the rehearsal dinner we decorated the reception area! It all came together great.
..I tried to stick with my running plan this weekend. Friday did a 40 min/ 7 mile bike ride by my house. Riding around on the country roads was a breath of fresh air and felt amazing! When it came around to Sunday's run though it just did not happen.. feeling pretty bad about it but hopefully I can make it up this week! Wedding recovery and traveling just takes it out of me!

Saturday we were up bright and early to get our hair done! Everyone looked great and we all loved our up-dos. We enjoyed snacks, champagne and laughs.

Sunday we went to have lunch with my dad and celebrate his birthday that is September 5th. I loved spending time with him and his girlfriend. My mom and her sent me home with lots of fresh goodies!!


Random traveler thoughts..
While I was traveling I realized that I brought lots of red and pink home with me. Do you ever realize that all week you've been wearing the same color?! I must have been in a red, romantic mood!
By the way.. I have heard if you are packing for a long trip it is best to find a color scheme so that you can mix and max your wardrobe throughout the trip. However this time was not intentional!

On the road again, Part 2

We are headed home tonight... I cannot believe it's Thursday already and we are going back on the road! Good thing we are young and travel warriors!.. I can't wait to see my family and my best friends! I haven't been to my house or seen my mom since the first weekend in June!! It's been way to long if you ask me!
The things I can't wait for:
1. To see my mom!!
2. See my best friends!! This picture was taken at Angie's (she is in the middle, in the white) rehearsal dinner. We were all in her wedding this June.

3. See my family dog, Tuck!

4. Have lunch with Keith and my mom on Friday at my favorite restaurant!

5. Enjoy some corn on the cob this Sunday! I have not had any yet this summer.. it's a crime.


I am in the wedding this weekend so I'm extra excited! I have a lot more things that are 'must' remembers so every time I think about something it goes right into my suitcase. Luckily when I go home I like to use all my mom and sisters stuff. Muahaha! I'm sure they don't love it but whenever I use a new hair product out of my ordinary routine I think my hair looks and feels better. Maybe it's my imagination but I love to try new beauty products!

Inspired

I have been researching some easy yet yummy snacks/meals for my pre- and post- workouts. I found this awesome recipe for Oatmeal Pancakes.. topped with peanut butter and strawberries, if that doesn't sound amazing then I don't know what does! 
I found the recipe at InspiredRD Blog. She is a registered dietitian as well and I am feeling very inspired by her blog! Getting my career wheels a turning!

End of summer?

Well I think it's about that time.. All my teacher friends have started back, I have seen tons of 'first day of school' pictures, and the pool has become less enjoyable to me.. so I think it's safe to say summer is about over.
First I would like to say RIP to my water bottle. I dropped it at the pool last week. I can't find a crack but it leaks everywhere.

And I got two big bug bites at the pool today. No thank you.

I feel so lucky though to have had this summer to myself, travel to visit family and friends, pass my RD exam and relax! I have a nice tan and list of books read to prove it. 
Some of the highlights of my summer have been..
1. Passed my exam! I am officially a registered and licensed dietitian!
2. Went to a Microbrew Cruise at the White Water Center. It was the most amazing time and I really hope Keith and I can do it again. You kayak for about an hour and a half. Then you get served this amazing dinner, we had salmon, shrimp, vegetables and peach pie. There is also a featured microbrewery that comes in a talks about their beer and then gives samples. All campfire side.



3. Started this blog! I have loved sharing my experience and recipes. I'm so happy I started it.
4. Bachelorette parties!

5. Hilton Head.. I had never been, it is absolutely gorgeous there! I loved spending quality time with my little nuggets too. And I obviously was pampered.


I'm sure I have a few pool days left in NC but I'm getting pretty excited for September.. Chillier weather, FOOTBALL, jeans & more weddings!
